Fried Pork Rib

Yummy fried pork rib that can be served with rice or steamed glutinous rice

Ingredients 500 g. pork spare ribs cut into 2" lenghts 5 cloves garlic 2 tsp whole peppercorn 1 tsp corainder seed 2 Tbsp thin soy sauce 1/2 tsp dark soy sauce 1 Tbsp seasoning soy sauce 2 Tbsp oyster sauce 1 Tbsp Chinese cooking wine 1 1/2 Tbsp sugar 2 Tbsp vegetable oil 3 cups water |
Preparation
1. Peel garlic, wash dirt, pat dry, and cut into small pieces. Well pound garlic with whole peppercorn and corainder seed in a mortar, then add it into cleaned spare ribs in a mixing bowl. Season with thin soy sauce, oyster sauce, sugar, seasoning soy sauce, dark soy sauce, and Chinese cooking wine, mix thoroughly, and allow to marinate for 1 hour.

2. Heat oil in a wok on medium-high heat. When oil is hot, add marinated pork rips, and fry until the rips are getting cook.

3. When the ribs are cooked, add about 1 cup water, stir well, cover the wok, bring to boil, and simmer until much of the water evaporates. Stir occasionally.

4. Add more water about 1 cup, stir well, cover the wok, bring to boil, and simmer again until much of the water reduce. Repeat this process one more time. After all the water reduces, stir well until oil comes out, then remove from heat. The ribs now are tasty and tender.

5. Put the cooked pork ribs on a plate, and serve immediately.
