Spicy Barbecued-Chicken Salad

Another version of barbecued-chicken called "Yam Khai Yang"

 | Ingredients 1/2 barbecued-chicken 2 Tbsp lime juice 1 1/2 Tbsp thin soy sauce (or fish sauce) 1 tsp sugar 3 Tbsp roasted red chillie paste 4-5 sprigs cilantro 1-2 tomatoes 1/4 head of onion 1/2 ground dried chillies |
Preparation
1. Debone barbecued-chicken, separate the chicken meat into small pieces, and set aside.

2. Peel onion, remove tomato stem, and cut cilantro roots, wash dirt, and pat dry. Finely slice onion, coarsely chop cilantro, then cut tomoto in quarter, remove seed, and cut into small pieces

3. Prepare dressing by mixing lime juice, roasted red chillie paste, thin soy sauce (or fish sauce), sugar, and ground dried chillies in a mixing bowl. In another large mixing bowl, put barbecued-chicken, all vegetables, and dressing in it, stir thoroughly.

4. Spoon the salad onto a bed of green lettuce leaves arranged on a plate, and serve immediately.
Tip: This recipe can substitute barbecued-chicken for fried chicken.
